Chia Pudding

Ingredients

  • 2 tablespoon chia seeds

  • 1/2 cup almond milk or soy milk

  • ½ tsp vanilla extract

  • ½ tsp erythritol

To make chia pudding, mix one part chia seeds with four parts milk (e.g. ¼ cup chia seeds and 1 cup milk).

You can spice it up with cinnamon, add honey for sweetness, and top it with fruit for fiber.

Variations:

½ teaspoon cinnamon + banana

½ cup berries + granola

1 tbsp cocoa powder

2 tsp maple syrup
