Huevos Rancheros

Ingredients

  • Corn tortillas

  • Refried Beans

  • Egg (fried or over-easy)

  • Sweet peppers (thin sliced)

  • Salsa (or diced tomatoes with pepper)

  • Queso fresco

  • cilantro

  • Optional: black beans, potatoes, ham

Instructions

Peppers: Heat up olive oil and minced garlic until fragrant. Add chili pepper, paprika, brown sugar, black pepper, and kosher salt. Add sliced peppers and dry roast together with spices. Add water or wine if they blacken too quickly.

Warm up corn tortillas and top them with refried beans and a fried egg.

Sprinkle on salsa or tomatoes, queso fresco, and a garnish of cilantro. Add peppers to the side.

Optional: serve them with black beans, sautéed diced potatoes, ham, and onions on the side.
